A grilled chicken recipe!

In honor of the beautiful weather we have been seeing – I have a grilled chicken recipe that I love!!  We eat it at least once a week in the summer – it’s super easy and delicious!

Use boneless skinless chicken breast halves and put them in a ziplock baggie with “sundried tomato” salad dressing.  (This can be a little tricky to find so an italian dressing works ok too.)  Refrigerate them while you heat the grill and get the topping (below) ready.

Now heat the grill to medium heat and to keep the grill clean put foil on the grills to heat.

In a small bowl combine olive oil, basil, shredded mozzarella, and diced roma tomatoes.

Take the chicken breasts out of their bag and place them on the grill for about 7 minutes.  Then flip them and top with the topping of olive oil, basil tomatoes and mozzarella. (this is where the foil comes in handy to make clean up easy!)  Cook until done!

Serve this up with your favorite summer side – try out a strawberry spinach salad too!  Enjoy!!

    I am going to try this recipe tonight – putting foil on the grill is a good idea too! thanks.
    Alternatively, the BBq Rubbed Chicken Breasts here are great!
