Sand Cake

Thank you so much to Cat Kohler – who is a blogger for momaha.com – for this awesome summer dessert recipe!!

If you’re looking for a perfect desert to take to that summer barbeque, here it is! It is light, airy and the kids will love it.

1 box of Nilla Wafers

1 8 oz package of cream cheese – room temp

1/2 stick of butter – room temp

1 C confectioners sugar

2 small packages of vanilla instant pudding

3 ½ cup milk

12 oz container of Cool Whip

1 Clean (preferably new) Child’s sand bucket

Drink Umbrellas

Crush the Nilla Wafer Cookies in your food processor until it looks like sand. Set aside.

MIX – cream cheese, butter and confectioners sugar till smooth – set aside

MIX – Vanilla instant pudding and milk with mixer till it becomes thick, add cool whip and mix well. Add the cream cheese mixture and blend well.

Cover the bottom of the sand bucket with a Nilla Wafer crumbs. Add a layer of pudding mixture. Repeat layers until done (ending with Nilla wafers). Add a few drink umbrellas for decoration.
